
Quick Keto Pizza Crust!! The most convenient little creation.
I'm going to be straight-up real with you guys.
I inhaled the entire pizza.
In like 5 minutes.
Alone.
For breakfast.
Yup.
It's good, okay.
Also, you know what? I was capable of making it without snacking the entire time during because this recipe is quick and easy and perfect for those times you come home ravenous and MUST EAT NOW.
If I haven't convinced you to make this yet just know this… It's not another fathead dough recipe. I repeat NOT FATHEAD DOUGH. If you like me never quite understood the hype around fathead dough…then look no further. This lovely alternative is for you.
Can I Freeze this Quick Keto Pizza Crust?
You sure can! This crust freezes great. Just make it, bake it for ~8min at 425*F. Add your toppings, wrap in wax paper and place in a plastic ziplock. Let it freeze topping side up.
Remove from the freezer and bake for 8-10min whenever you feel a pizza craving coming on! Easy as that!
Can I make one large Quick Keto Pizza Crust instead of two smaller ones?
Yup! Just be sure to bake it slightly longer!
Some Ingredients I'd Like To Highlight:
- Vital Wheat Gluten – If you have questions about why I include this ingredient, I wrote an entire article on what it is and why I use Vital Wheat Gluten on my keto diet! I also included where to buy it, how many carbs it contains..and how to use it in baking. If you choose to leave this out, that's okay too!
- Almond Flour – I use the Kirkland Costco brand of almond flour (I buy it in bulk on Amazon or at Costco itself occasionally) for this recipe. As I’ve noted in many of my past recipes, the brand of almond can affect the final outcome of the recipe because absorbency can vary depending on how the flour has been processed.
Tools I use:
- Nutritional Food Scale – AKA my best friend. This little buddy has been with me for over 4 years and never fails. Perfect measurements and only needs the batteries replaced maybe once a year!
- Pizza Cutter -If you are going to be making pizza regularly, you better have one of these! Love mine!
- Pizza Stone -Again, if you really want to up your pizza game, I recommend a pizza stone! It helps cook the pizza more evenly, similar to restaurant quality pizzas!
- My Camera – Because I always get asked! I use my phone and my camera interchangeably for photos but I absolutely love the quality of my camera if I have more time to take photos.
Notes:
- The dough may stick to your hands slightly..this is normal! Just use parchment paper on the top and bottom of the dough to roll it out! You can use either your hands or a small rolling pin works well for this part.
- Bake longer for a crispier crust
Quick Keto Pizza Crust
Serves: 4 (makes 2 small pizzas)

Ingredients:
- 2 eggs
- 1/3 cup (30g) grated parmesan cheese
- 3 tbsp (45g) butter, melted
- 1 1/2 cups (168g) almond flour
- 2 tbsp vital wheat gluten (or another 2-3 tbsp almond flour)
- 1/2 tsp basil
- 1/2 tsp oregano
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp garlic powder
Directions:
- Pre-heat oven to 425*F.
- Use a fork to whisk together your egg, parmesan cheese and melted butter.
- Once mixed, add your almond flour, vital wheat gluten and seasonings..stir well to combine.
- Form the soft dough into two roughly even balls.
- Roll out each ball of dough on a flat baking sheet or pizza stone between two pieces of parchment. I recommend rolling it out to be a thinner crust! (See photo)
- Bake the crust for 7-9min or until edges are lightly browned.
- Add your toppings and place bake in the oven for another 7-9min and then serve hot! Enjoy your Quick Keto Pizza Crust!

How big is your small pizza crust? 12”?
And when rolleding out Almond dough, how did you get your edges so smooth?

I just made this, and the dough was extremely doughy, dense, and tasted horrible.
