
These were so good! They only require a few very simple ingredients and about 1-2hours of freezing then your ready to go. You could also sub any nut butter for the almond butter(I personally used peanut butter for this one but I know it's not Paleo!) for different kinds of fudge!
Ingredients:
-1/2 cup natural peanut butter
-2 tbsp coconut oil
-stevia drops or 1.5 tsp honey or pure maple syrup (I used sugar-free maple syrup which works too!)
-pinch of salt(don't omit!)
-1 square 70% lindt dark chocolate
-optional add ins: peanuts, almond slivers, walnuts, cacao nibs/carob chips
Directions: Simply stir together all four first ingredients in a bowl (I highly recommend having everything at room temp. so the oil doesn't harden) then drop spoonfuls into a lined mini muffin cup tin. (I used mini dixie cups which worked well!, you may be able to pour it directly in the pan as well but I have yet to try that). Now take your dark chocolate and either melt it and drizzle on top of each one or break it up and put a piece inside each piece! Place the whole tray in the freezer for at least and hour or so and once set, take out and enjoy! This is melt in your mouth fudge so don't worry about them freezing rock hard! 🙂
Makes 10 mini fudge cups.
