Keto No Bake S'mores Bars..
..ahh, the perfect treat reminiscent of my childhood favourite.
I don't know about you, but I grew up eating s'mores quite often.
They were ALWAYS a thing on late nights after a long day of swimming or having friends over during the summer.
We'd light a small fire and get to roasting our marshmallows.
You'd always have that one friend that could never just “toast” a marshmallow and instead it would turn into this black charcoal mess as they burnt it to pieces.

But they'd still attempt to eat it anyways and get sticky, gooey melted marshmallow all over their fingers.
Then there was me who was the total opposite and always tried to go for that perfectly golden marshmallow so I could neatly smush it between some chocolate and graham crackers.
However you made your s'mores, you'd always know one was not enough and if you were done, there was always someone else you'd be making one for.
Seriously, smore's are just that classic dessert you have to have at least once during the summer months.
Apparently the first S'more was invented in 1927!
The first official recipe for a s'more came out in the 1927 Girl Scout guidebook “Tramping and Trailing with the Girl Scouts.”
They called the recipe “Some More”.
I guess we kind of shorted the name from there!

These keto friendly s'mores bars are not exactly the same as your traditional s'mores..but they are still just as delicious!
These bars have a crust made of almond flour, cinnamon, butter and sweetener to act as the graham cracker layer..
Then they have a marshmallow creme layer to act of course, in place of the marshmallows!
This layer is made from Stoka Nutrition's Z-Mellow Sugar Free Marshmallow Creme. It's virtually zero carb and tastes delicious as it's made with a special keto-friendly sweetener called Allulose!

Next, for the chocolate layer, I used Krisda chocolate chips (stevia sweetened and just 2 NET carbs per tablespoon) and melted those down along with some coconut oil.
Lastly, for the “graham cracker” topping, I used 3 extra tablespoons of almond flour, a little melted butter, cinnamon and sweetener and crumbled that mixture over the top of the bars.
These layers together create for the ultimate low carb s'mores bar experience!
Although these keto s'mores bars aren't baked, they still taste awesome chilled and can be microwaved for a few seconds for a delicious melty treat you can eat with a fork or spoon!

Ingredients In Keto No Bake S'mores Bars
- Almond Flour – I always buy the Kirkland brand! It's usually cheapest and can sometimes be found in double packs.
- Powdered Monkfruit/Erythritol Sweetener -My favourite keto-friendly sweetener. This blends seamlessly into no-bake desserts.
- Keto Chocolate Chips – I've used Krisda Chocolate Chips for years. They are great because they are also high in fiber making them super low carb! They have no weird stevia after-taste either. But I'm not sure if they are available in the US so I've linked to Choc-Zero's chocolate chips which are another great option.
- Coconut Oil – Super helpful in no-bake desserts where you want a layer to set as it hardens in the fridge.

Tips For Making Low Carb No Bake S'mores Bars
- Feel free to use another sweetener for the crust of this recipe. I just prefer the powdered/monkfruit erythritol one because you don't get the crunch of a granular sweetener and it tastes great!

- When spreading your marshmallow fluff layer, try to do so quickly as the chilled bottom layer will cause it to start to set.
- You can use another chocolate for this recipe like a 90% dark chocolate bar. Just be sure to account for the difference in NET carbs. You can also lower the carb count by using a slightly thinner layer of chocolate on the top of your bars and/or skipping the additional almond flour topping.
How To Store Keto S'mores Bars
- Store these bars in the fridge between layers of parchment/wax paper in an airtight container for up to 3 days.
- OR freeze the same way until you want a snack! Just be sure to let them thaw slightly or they may be a bit difficult to eat.
Keto No Bake S'mores Bars Recipe
Serves: 10 Keto S'mores Bars
Ingredients:
Crust
- 1 cup almond flour, 112g
- 2 1/2 tbsp powdered monkfruit/erythritol sweetener
- 3 tbsp salted butter, melted, 45g
- 1/8 tsp cinnamon
- pinch of salt
Marshmallow Layer
Chocolate Layer
- 3/4 cup chocolate stevia sweetened chocolate chips, 180g
- 1 tbsp coconut oil, 15g
Topping (optional)
- 3 tbsp almond flour, 21g
- 1 tsp salted butter, melted
- 1 tsp powdered monkfruit/erythritol sweetener
- pinch of cinnamon
Directions:
- Line a 9×5 loaf pan with parchment paper.
- In a small bowl, whisk together your almond flour, powdered monkfruit/erythritol sweetener, cinnamon and salt.
- Add the melted butter and stir until a dry crumbly mixture is formed.
- Pour this mixture into your loaf pan and press it evenly over the bottom to form your crust.
- Place the loaf pan in the fridge while you follow step 6.
- Scrape your container of Z-mellow into a microwave safe bowl and microwave for ~15-20s or until melted enough to be easily spread.
- Remove your crust from the fridge and spread the marshmallow fluff evenly over top of it.
- Place your pan in a freezer while you follow step 9 (fridge will also do, just give it an extra 5min to set).
- In a small bowl, mix together your topping ingredients including, 3 tbsp almond flour, 1 tsp melted butter, 1 tsp powdered monkfruit/erythritol sweetener and a pinch of cinnamon. Set aside.
- In another microwavable bowl, add your chocolate chips and coconut oil and microwave in 30s increments, stirring in-between until melted (~45s-1min).
- Once melted, let the chocolate cool just slightly before spreading it over-top of the chilled marshmallow fluff layer.
- Once you've got your chocolate evenly spread over the marshmallow fluff layer, you can sprinkle your topping you made earlier.
- Place the loaf pan back in the fridge to set for at least an hour.
- Slice into squares using a sharp knife dipped in very hot water and wiped with paper towel between each slice. Serve chilled or microwave for a few seconds and eat with a spoon for a melty gooey treat! Enjoy your Keto No Bake S'mores Bars!
