Gluten-Free, filling, high-fibre muffins, perfect for a snack or a quick breakfast grab.

Ingredients

 

Instructions
  1. Pre-heat oven to 350*F.
  2. In a medium bowl, combine oat flour(or ground oats), almond flour, spices, salt, baking soda and baking powder.
  3. In a separate large bowl, whisk together sugar, Truvia and coconut oil.
  4. Next, whisk in the eggs and applesauce.
  5. Gradually add your dry mixture to the wet ingredients, whisking well to combine.
  6. Fold in the apple and almonds then spoon into a lined muffin tray.
  7. Optional. top with additional apple/almond pieces for presentation.
  8. Bake in pre-heated oven for 21-25min or until a toothpick comes out clean and the top is no longer wet to the touch.
  9. *Careful not to under-bake*
  10. Cool on a wire rack.
  11. Optional: Brush the tops with butter and sprinkle cinnamon sugar OR mix together the ingredients for the simple glaze and drizzle on top.
  12. Enjoy!

Sweet Maple Bacon Oatmeal!

Yes, you read that right. I dared to do the insane and put the words “healthy, chocolate & bacon” all in one sentence. Actually I put them all in one bowl of super awesome oatmeal. If you are just crazy enough to try this recipe, I guarantee you will be in for a great surprise. This oatmeal packs wonderful salty and sweet flavour and will leave you wanting more. Don’t be fooled by the ingredients, this oatmeal is actually surprisingly healthy too! Take me to the recipe!

Cinnamon Banana Coconut Yogurt

Cinnamon Banana Yogurt
I made this snack as we have about a pound of ripe bananas that need using up so instead of another smoothie I decided to chop some banana over plain 0% greek yogurt(mixed with a drop of coconut extract, 1/8 tsp vanilla & a few drops of stevia) topped with cinnamon, pecans & unsweetened shredded coconut..mmmm.

Tuna Apple Snack I also had this great snack of tuna mixed with my usual dijon mustard, pepper, yellow mustard, green onion and 1 small dill pickle chopped and then I also ate 1/2 an apple with chopped almonds, a drizzle of sugar-free maple syrup and a few raisins.

Lettuce Wrap Snack
Another snack I put together was lettuce wraps with some spicy hummus, avocado, green/red onion, pinch of garlic/onion powder & cayenne wrapped in ham as well. I really love how versatile avocado is!
