The Best Keto 1 Minute Microwave Brownie..

Let's be honest, this brownie isn't going to win any awards for its looks.

BUT we must remember, it's what's inside that counts.

So although this brownie does not look the prettiest, I can tell you it is downright DELICIOUS once you dig into it. This is probably the best microwave dessert I've ever had.

This recipe takes “fudgey” brownies to a whole other level. Gooey batter, melty chocolate chips..omg.

I'm pretty sure I devoured this in like 0.0009s after making it.

So anyways, like I said, don't judge the look of this brownie (it was terrible to photograph, trust me), just know that you will thank me after making it and the taste makes up for my lack of photography skills in this post, big-time.

  1. In a small grated bowl or ramekin, whisk together all of your dry ingredients up to and including xanthan gum.
  2. Next add your melted butter, water and vanilla extract. Stir until combined. 
  3. Add the chocolate chips, mix once more. Then microwave for 45s-1:20s (depending on how you like your brownie/how strong your microwave is – see the tips on this).
  4. Grab a spoon and enjoy The Best Keto 1min Microwave Brownie!

A delicious extra fudgey keto microwave brownie for one.

  1. In a small greased bowl or ramekin, whisk together all of your dry ingredients up to and including Xanthan Gum.

  2. Next add your melted butter, water and vanilla extract. Stir until combined.
  3. Add the chocolate chips, mix once more. Then microwave for 45s-1:20s (depending on how you like your brownie/how strong your microwave is – see the tips on this).
  4. Grab a spoon and enjoy The Best Keto 1 Minute Microwave Brownie!

  • I mixed my ingredients in a separate bowl then scraped the batter into a greased ramekin for a clean finish but this is completely optional. 
  • If you know your microwave cooks on the faster-side then cook the brownie for just 45s to start and add time as needed. (My microwave bakes slower and took 1 min for reference)
  • If you want a solid brownie cook it longer, if you want a super gooey, fudgey brownie then cook it for the times I specified. 
  • This is great topped with low carb ice cream or homemade whipped cream as well!
