Keto Pumpkin Spice Balls Recipe

Ingredients

Cake Balls

  • 3/4 cup pecan flour or almond flour 85g + extra for topping
  • 3 tbsp powdered monkfruit/erythritol sweetener 48g
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp allspice
  • pinch of cloves
  • pinch of salt
  • 1 1/2 tbsp cream cheese softened, 21g
  • 1 1/2 tbsp canned pumpkin 21g
  • 1/4 tsp vanilla extract

Glaze (optional)

Instructions

  • In a bowl, whisk together pecan flour, powdered monkfruit/erythritol sweetener, spices and salt.
  • Add the cream cheese, pumpkin and vanilla extract and mix well until a soft dough forms.
  • Line a plate with parchment paper.
  • Roll the dough into 8 balls and place them onto the parchment paper.
  • To make your glaze, add the powdered monkfruit/eryhtritol sweetener, cream cheese, light cream and vanilla extract to a bowl.
  • Whisk until smooth.
  • Take one of your cake balls and using a spoon, dip it into the glaze, moving it around to coat.
  • Place the glazed cake ball back on the plate.
  • Repeat this process for the rest of the cake balls.
  • Place the finished cake balls into the fridge or freezer to set (depending on how solid you want the centers to be). After 30min you can serve. Enjoy your Keto Pumpkin Spice Balls!

Notes

Tips For Making Keto Pumpkin Pie Balls

  • If you find your dough is too dry to roll into balls, just add an extra 1/2 - 1 tbsp of softened cream cheese.
  • Feel free to add small pieces of raisins to these if making them for a party or get-together! It's delicious!
  • Store these in the fridge for a softer texture and freezer for a firmer texture

  • Pecan Flour - This flour has a unique almost sweet taste. It pairs beautifully with pumpkin and spices! But you can also sub almond flour if you do not have it.
  • Powdered Monkfruit/Erythritol Sweetener - in my opinion, this is the best sweetener for keto desserts but especially no-bake ones because it's so fine that it blends in seamlessly without leaving any weird "crunch" to your desserts. You can also use any other powdered sweetener that measures like sugar if you prefer.
  • Vanilla Extract - You can use pure or artificial!

Storage Instructions For Low Carb Pumpkin Spice Bites

  • Store these Keto Pumpkin Spice Bites in ziplock or airtight container in the freezer between layers of wax our parchment paper once the glaze has set.
  • You can also store them in the fridge for a softer texture (although, I recommend freezing them to preserve them longer, then letting them thaw in the fridge instead)
