Low Carb Keto Peanut Butter Blondies

Chewy and soft low carb keto peanut butter bars!

  • Pre-heat oven to 350*F.
  • In a bowl, mix together all dry ingredients except sweetener and chopped peanuts.
  • In another bowl, add your melted butter, peanut butter, sweeteners and vanilla extract, mix well.
  • Add your two eggs and use a hand mixer to blend together (or whisk well with a fork).
  • Add your dry ingredients to the bowl and use a spoon to stir everything until well-combined.
  • Grease a 9x9inch pan and spread the batter into the bottom evenly.
  • Sprinkle chopped peanuts on top, then bake for ~20min or until edges are just lightly browned and begin to pull away from the sides.
  • Cool for 15-20min before slicing into 16 squares. Serve warm or chilled with an extra drizzle of peanut butter! Enjoy your Low Carb Keto Peanut Butter Blondies! (Tip: these also go great with low carb icecream on top!)


  • Store these bars in an airtight container between layers or parchment or wax paper on your counter for up to 5 days or in the fridge for up to a week. Alternatively you can also freeze them for a later snack.
