Keto Cheesecake Stuffed Chocolate Chip Cookies
I made these after seeing a bunch of stuffed cookies on instagram going around..
You know, those epic videos when they break them open to showcase this ridiculously epic filling?
I figured, why not make a keto version?
And here we are. Continue reading “Keto Cheesecake Stuffed Chocolate Chip Cookies”

Keto Pizza Pockets ! That’s right.
I haven’t had pizza pockets for years but the idea for these had been buzzing around in my head for so long. I had been dying to try making Keto Pizza Pockets..
And let me tell you.. I attempted it. More times then I am willing to share, lol.
But thankfully, trial and error is beneficial and I finally achieved a recipe I happy to post! Continue reading “Keto Pizza Pockets”
Flaky Keto Puff Pastry.. can we all just take a moment to breathe this in.
When I started a keto diet, I never thought I’d be eating pastries again. But believe it or not, here we are.
I’ve not only developed an insanely good flaky keto puff pastry using “Vital Wheat Gluten” as the main ingredient…I’ve also created a delicious 100% gluten free keto puff pastry. This way you can choose which version best suits you lifestyle. Continue reading “Flaky Keto Puff Pastry”
Keto Cappuccino Cupcakes…now you can have your coffee and eat it too..or something like that.
These combine two of my favourite things…COFFEE and DESSERT. A fluffy chocolate and coffee cupcake topped with a rich coffee flavoured frosting..Delicious.
These remind me a lot of Duncan Heinz chocolate cupcakes (which I used to love) although I never loved the traditional frosting you could also buy. I found it insanely sweet without much else to offer.
That’s why I designed this frosting to be full of flavour. It’s a combination of cream cheese, butter, coffee and melted chocolate…sounds good right? Well it’s insanely good.
As in, I may have licked the bowl one too many times while making these…
Keto Cappuccino Cupcakes are where it’s at. Continue reading “Keto Cappuccino Cupcakes”
Keto Apple Fritters, my favourite donuts! Although, they aren’t technically donuts.
Every time I ever went to a donut shop I’d always get an apple fritter. I’ve tried them from so many places.. and personally my favourite ones are the ones with lots of glaze and apple chunks inside. I also like when their dough is more flavourful and spiced with cinnamon and/or nutmeg.
So for this recipe, I did my best to replicate those delicious Apple Fritters.
These low carb apple fritters are made with a combination of almond flour, coconut flour, xanthan gum and vital wheat gluten in place of white flour. This combination makes them extra “doughy” inside and not dry or crumbly.

These Low Carb Red Pepper and Cream Cheese Pinwheels might be one of my favourite things ever. They have been made by my Mom for years as a party appetizer. Everyone always becomes obsessed with them and asks for the recipe immediately!
My friends and family know them all too well. When you see the pinwheels coming..you better run and grab some because they are about to disappear in the blink of an eye! Continue reading “Low Carb Red Pepper and Cream Cheese Pinwheels”
This is The Best Salad I’ve Ever Eaten.
Normally I don’t share recipes I didn’t specifically schedule and plan to post on my blog..
But I had this salad last night and I kept eating it thinking “wow this really is amazing, like SO good, I have to share it with people”.
So that’s where this post came from! Continue reading “The Best Salad I’ve Ever Eaten”
Soft Keto Buns…I’m not going to lie, when I was trying to decide what to call these, I almost called them English muffins! They reallllly remind me of them if you cut these and half and toast them with some butter and jam (my favourite way to eat them). BUT these also work great as hamburger buns if you make 5 instead of 6 buns and cook them a tad longer. So I had to stick with calling these Soft Keto Buns. As they are soft, and they do look like buns!

Keto Goat Cheese Tartlets…aka little bites of heaven.
These are DELICIOUS. I’m not just saying this. I ate 3 immediately after baking them and each time I kept saying “WOW”. Friends and family agreed. The pastry for these is perfect. You wouldn’t even know it’s low carb.
The pastry is flaky, buttery and has a fantastic crunch. When I first came up with this low carb flour combination I think I cheered out loud. I baked it on it’s own to test it and when I tasted it I was in SO EXCITED. Like I’m talking, happy dancing around my kitchen, excited.
I had so many failed attempts before this so it really does feel amazing to share this recipe today. Continue reading “Keto Goat Cheese Tartlets”
