Keto Strawberry Rhubarb Muffins! I knew I had to make these this year because every summer we have a beautiful rhubarb plant pop-up in our garden.
It’s one of my favourite things to bake with! It’s got this nice tanginess that makes muffins, cakes and pies taste so good.
When I was little I used to take the rhubarb seeds and spread them everywhere because I loved it so much and wanted us to have more rhubarb that my Mom could make me muffins with…needless to say, she was not too pleased about me spreading rhubarb to all parts of our garden.
But today it’s my turn to make muffins and I have to say, these turned out delicious! I love the combination of strawberries and rhubarb. These are super soft inside with a crispy exterior. Continue reading “Keto Strawberry Rhubarb Muffins”

Keto Strawberry Cream Cheese Hand Pies…
I’ve come a long way from my first blog post.. Low Carb Pizza Frittata For One
Mouthwateringmotivation is growing and so am I! I’ve learned so much over the years and continue to learn everyday. I would have never thought-up a recipe like this years ago.
This has got to be hands-down, above all of the recipes on my blog, my favourite keto dessert thus far.
These pies are beautiful. They contain just a simple cream cheese and strawberry filling.. but when combined with a buttery, slightly crisp but still soft in the centre, keto pastry dough and a sweet drizzled glaze.. wow. Epic. Continue reading “Keto Strawberry Cream Cheese Hand Pies”

This is The Best Salad I’ve Ever Eaten.
Normally I don’t share recipes I didn’t specifically schedule and plan to post on my blog..
But I had this salad last night and I kept eating it thinking “wow this really is amazing, like SO good, I have to share it with people”.
So that’s where this post came from! Continue reading “The Best Salad I’ve Ever Eaten”
Soft Keto Buns…I’m not going to lie, when I was trying to decide what to call these, I almost called them English muffins! They reallllly remind me of them if you cut these and half and toast them with some butter and jam (my favourite way to eat them). BUT these also work great as hamburger buns if you make 5 instead of 6 buns and cook them a tad longer. So I had to stick with calling these Soft Keto Buns. As they are soft, and they do look like buns!

I have to say, I’m pretty proud of myself for this recipe. I just made, dare I say it.. The Best Keto Croissants.
These are NOT fat head dough. I made them with a flour combination that I’ve found to work really well in low-carb pastries.
These Keto Croissants are yeast risen and made mainly with, vital wheat gluten, almond flour, coconut flour and oat fiber.
The Best Keto Croissants have beautiful layers, just like real croissants and pull apart exactly how you’d expect. The cold butter and milk is the key to creating these layers along with folding of the dough.

Alright guys here’s a fun one for you.
This keto deep dish pizza was pretty amazing to see coming out out of the oven and even beforehand..
It’s quite epic and I’m pretty proud if it, if I do say so myself.
The dough is a beautiful texture. Probably the nicest dough I’ve ever worked with that’s low carb! It’s soft and stretchy and acts just like pizza dough. Continue reading “Keto Deep Dish Pizza”
Soft, cheesy, delicious.. The Best Keto Cheesy Bread I’ve had! These cheese breadsticks are made with a yeast risen dough which gives them a closer texture to traditional breadsticks. They are topped with garlic butter and a mixture of mozzarella and parmesan for tons of cheesy goodness..Dip them in marinara sauce or garlic dip for the ultimate traditional garlic stick experience. These Keto Oreo Cookies are something I will remember forever.
This recipe is one that came to me literally in the middle of the night. After watching a cooking competition show where a famous chef talked about making the impossible possible..and then showed a bunch of his crazy dessert inventions.. It got me thinking.. Why HAVEN’T I tried recipes that really push me out of my comfort zone?
There’s so many recipes I’ve want to to try and make but always deemed them too hard or impossible to make keto, at least to the standard I’d want them to come out.
So that’s when I thought, let’s just go for it and see what happens. WHY NOT. The worst that could happen is that I trash the recipe and bake something else for today’s blog post.
But man.. I was absolutely determined to get these Keto Oreos right. And that I did.
On the first try.
