Keto Lasagna WITH NOODLES!

I don’t know where to begin. This lasagna was EVERYTHING.

It tastes BETTER than regular lasagna..BETTER. I am being 100% honest guys. You need to make this like ASAP.

The “noodles” themselves are delicious on their own but pair that with a ton of cheese, meat and sauce…and OMG. That’s all I can say.

I slightly tweaked this recipe from it’s original I found here. (The author, Kyndra is a genius & I give her full credit!)

Ingredients:

Noodles:

    • 2 eggs
    • 4 oz cream cheese, softened
    • 1/4 cup Parmesan cheese, grated (I used half real parmesan and half dried)
    • 1 1/4 cup mozzarella cheese, shredded (130g)
    • Pinch of each: majoram, thyme, rosemary
    • 1/2 tsp basil
    • 1/2 tsp oregano
    • 1/4 tsp garlic powder
    • 1/4 tsp onion powder
    • 1/4 tsp salt

Filling:

  • 1 lb ground beef
  • 1 1/2 cups of lower-carb pasta sauce (I used “Classico Tomato Basil” but added some salt, splenda and basil to taste )
  • 3/4 cup (90g) mozzarella cheese, shredded
  • 6 tbsp 2% cottage cheese
  • 1/3 chopped onion
  • 1oz finely chopped green pepper
  • 1 minced garlic clove
  • 1/2 tsp chili pepper flakes (optional)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Pinch of each: majoram, thyme, rosemary
  • Salt and pepper to taste

Directions:

Noodles:

1. Preheat oven to 375° Line a 9×13 baking dish with tinfoil sprayed with oil or parchment paper.

2. In mixing bowl, using a hand mixer, cream together cream cheese and eggs.

3. Next, add Parmesan cheese and spices. Mix to combine.

4. Fold in mozzarella cheese and mix until well incorporated.

5. Spread the mixture into the baking dish, forming an even layer.

6. Bake for 20-25 minutes.

7. When the “noodles” are done baking, cool in the fridge for about 20 minutes and then cut into thirds. This makes three perfectly sized “noodle” layers for an 8.5 X 4.5 X 2.5 loaf pan.

*NOTE: You can also make the noodles ahead of time and store them in your fridge or freezer!)

For The Filling

8. In a large skillet over medium-high heat, combine ground beef, onion, peppers and  your spices. Cook until the meat is browned.

9. Drain excess fat from pan and add ¾ cup of your sauce to meat. Reduce heat to low and simmer for 10 minutes.

Putting It All Together

10. Pour ¼ cup marinara sauce into bottom of loaf pan. Top with the first “noodle” layer

11. Layer a third of the ground beef mixture. Top with ¼ cup mozzarella cheese and 3 tbsp cottage cheese, and cover with another “noodle” layer. Repeat these steps.

12. Cover the top “noodle” layer with remaining ground beef, and mozzarella cheese.

13. Sprinkle a little parmesan and basil over top. Bake for 20 minutes. Enjoy!

If you guys don’t find this keto lasagna down-right epic then you might be crazy.

This recipe is amazing and I just wanted to again than the original author for sharing such a wonderful dish!

  5. First you mention cream cheese in your ingredients, then you say to use cottage cheese. Which is the right one.

    1. It’s actually both. The cream cheese is used in the noodle component and then if you scroll down, cottage cheese should be listed in the ingredients for the actual lasagna filling. Hope that helps!

  6. Just made this recipe. It looks beautiful. Waiting to let it cool down a little before we dig in. It smells delicious and I love the flavor and texture of the noodle. I saw on previous comments about trying it as a pizza crust. I think that may work. I’m going to try that! Thanks for the recipe!

  8. I made this a few weeks ago, and my husband did not notice that it didn’t have the “pasta” noodles in it, until I asked him how he liked it. I overheard him telling his sister that I had made keto lasagna and it was delicious 🙂 I plan on making this for dinner tonight!!

    1. Hmm, that’s a tough one.. but lasagna is pretty versatile. I’m sure you could use whatever cheese you like in place of it! Maybe more mozzarella, some asiago, or even a bit of cream cheese to add some creaminess to it? Let me know if you try it out!

  9. Do you cover the loaf pan or cooking dish when you leave it in there for 20 minutes?! Or just put it in cover-less?

      1. Hi! This looks really delicious and I’m looking forward to making this. However, I use the Carb Manager app as I’m only allowed 13gNET carbs per day 🙁 and according to the app, the nutrition counts are off. First, I adjusted the pasta sauce down to 1c instead of 1 1/4c (per the instructions in the recipe you only use 1c) and I increased the cottage cheese to 9tbsp (as you use 3tbsp per layer multiplied by 3 layers) and the nutrition calculations PER SERVING with a serving size of 4 per recipe according to the Carb Manager app are:

        9 NET CARBS
        11 total carbs
        2g fiber
        46g fat
        53g protein
        675 calories
        3 glycemic load

        However, if I increase the servings per recipe to 6, then I get the following:

        6 NET CARBS
        7 total carbs
        1g fiber
        31g fat
        35g protein
        450 calories
        2 glycemic load

        Can I ask how you calculated your nutrition amounts? Maybe I’m off. Thanks.

  10. Hi! This looks delicious and can’t wait to make it. However, I just entered the ingredients into the Carb Manager app in a custom recipe (it wouldn’t import) and it calculates 1 serving as:
    11g net carbs,
    13g total carbs,
    48g Fat,
    54g Protein
    707 calories
    Is this correct? I’m only allowed 13g net carbs daily so I just wanted to make sure. Thanks!

  12. Oh my goodness! You were not exaggerating one bit when you said this was the best you ever tasted! My husband is a meat & potato guy that I’m trying to make a little healthier by slipping in my keto recipes on. He thought this was so very delish also. I cut off one of the ends of the “noodles” and had him taste it before I cooked the lasagna. We have decided to just make the noodles and use them as bread sticks, they are that good!! The husband did not want to know the ingredients, just to make sure it doesn’t ruin the wonderful taste. BTW~ he hates cream cheese and refuses to eat anything that he sees me make with it. teehee! Thanks again for a fabulous recipe. Oh and I didn’t use the cottage cheese, cuz he would have seen that!

  15. Thanks so much for the recipe! I actually only used the noodle recipe and filled the lasagna with veggies and some extra cheese on top. My family had their own regular lasagna, but all loved mine so much that we’ll make keto for everyone next time. I have PCOS and am really hoping keto will help me out 🙂

  16. I .have made this a few times and love. Did you say take whole carb amount for the lasagne was 10 or was that per quarter serve?

    1. Haha no real reason, if you ever met me you’d understand, I have a very random obsession with cottage cheese! I actually eat it almost everyday. I’ve always liked it since being a kid so I just happened to it it in the fridge!

  17. THIS LOOKS SO GOOD!, COULD I REPLACE THE RED SAUCE WITH A WHITE SAUCE, SOME FAMILY MEMBERS ARE NOT REALLY INTO THE RED SAUCE.

  21. note: using cronometer i added the ingredients….. i did add turkey sweet italian sausage to mine…….but my numbers per 4 servings were huge: calories 1275, carbs 28.8 fat 88.7 protein 91.5………!!!

  22. I made this today and it was so good. We had guests for dinner and they all loved it. I did use ricotta instead of cottage cheese.
