Banana Protein Breakfast Pudding-Low-Carb

banana-pudding-1Okay..so this is my new guilty pleasure. It is absolutely amazing!! This was a complete experiment but it turned out so awesome I just had to share!

This is thick and delicious like pudding should be and bonus..no added sweeteners!! It is like heaven in a cup…anyways here is the recipe!

Ingredients
-1 scoop vanilla protein powder(Make sure you like the taste. I just got “trutein vanilla” and it has made all the difference. This is hands down the best protein powder ever. I could go on and on about it but that's a whole other post 😉 )
-1/4-1/3 cup almond milk depending on how thick you want your pudding to be.
-1/3 a large or 1/2 a medium FROZEN banana
-1 tbsp cottage cheese
-1 tbsp greek yogurt
-1 tsp flaxseed (could possibly leave out but adds thickness and healthy fats!)
-1/4 tsp vanilla extract or more to taste
-pinch of xanthan gum for extra thickness!(if you don't have this, you could try using unflavoured jell-o mix or extra flaxseed)

Optional Toppings: 1 tbsp carob chips(healthier chocolate-chips, my new obsession!), 1 handful of frozen chopped raspberries
*This would also be amazing as banana-nut pudding with pecans or walnuts stirred in or any other fruit toppings!

Directions: In a separate cup, pour in your protein powder and add almond milk until thick pudding-like consistency and stir until pretty much smooth. Pour into a blender. Next add the rest of your ingredients and blend until smooth. Pour in a bowl, top with whatever you feel like and enjoy you delicious guilt-free treat! Yum!!

Nutrition Facts(using trutein protein powder): 3g fat, 15g carbs, 7g sugar(natural), 27g protein
